Cook Time: 35 minutes
Ingredients
- 2 medium sweet potatoes, peeled and diced into 1-inch cubes
- 2 medium apples (e.g., Honeycrisp or Fuji), cored and diced
- 2 tbsp olive oil or melted coconut oil
- 2 tbsp pure maple syrup
- 1 tsp ground cinnamon
- 1/4 tsp Symphony Seasonings Replenishing Salt
- 1/4 cup chopped pecans (optional, for garnish)
- Fresh thyme sprigs (optional, for garnish)
Instructions
Preheat the Oven:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
Combine the Ingredients:
In a large bowl, combine the diced sweet potatoes, apples, olive oil, maple syrup, cinnamon, and Replenishing Salt . Toss everything together until the pieces are evenly coated.
Roast the Mixture:
Spread the mixture in a single layer on the prepared baking sheet. Place it in the oven and roast, stirring halfway through, until the sweet potatoes are tender and their edges are caramelized. This should take about 30–35 minutes.
Add Pecans (Optional):
If using pecans, sprinkle them over the mixture during the last five minutes of roasting to give them a light toast.
Serve and Garnish:
Transfer the roasted mixture to a serving dish. Garnish with fresh thyme sprigs for a burst of color and aroma, if desired, and serve warm.
